Simple mutton roast, mutton pieces are cooked and blended with onion and spices. If you are a meat lover then defenetly you will like this dish. Here is recipe for you all to try.
Ingredients
- Mutton 1 kg, medium size cubes
- Ginger 1 medium size piece, chopped
- Garlic 6 cloves, chopped
- Onion 4 nos, medium size, sliced
- Small Onion / Shallots 6 to 8 nos, crushed
- Green Chilli 4 nos, slitted
- Tomato 1 medium size, chopped
- Turmeric powder 1/2 tsp
- Red Chilli Powder 1 1/2 tsp
- Kashmiri Chilli Powder 1 tsp
- Garam Masala 2 tsp
- Fennel Powder 1/2 tsp
- Salt
- Water 1/2 cup
- Oil
- Curry Leaves 3 sprigs
- Coriander Leaves few, chopped
To Marinate
- Lemon Juice 1 tsp
- Salt
- Black pepper powder 1/2 tsp
- Turmeric Powder 1/4 tsp
Method
Clean mutton cubes drain water nicely and marinate with lemon juice, salt, black pepper powder and turmeric powder for 15 to 30 minutes.
Heat oil in pressure cooker and ass finely sliced onions. Saute till it becomes golden brown colour. Add ginger and garlic paste saute for few seconds. Now add crushed small onion and curry leaves saute for few seconds. Add green chilli and saute for 1 minute. Mix the masala powderes with little water and add to the onion mix and saute well. when the raw smell of masala is gone and oil starts appearing, add marinated mutton pieces, chopped tomato and little salt. Mix well and saute for 4 to 6 minutes. Add water and cook till the mutton is done, it will take 5 to 6 whistles.
Once pressure goes off open the pressure cooker if there is excess water, boil till the water evaporates . You can transfer the curry into a non stick pan or iron pot and cook on low flame till it is roasted well. My pressure cooker is a nonstick one so I roasted in the cooker it self. Add little more curry leaves and chopped coriander leaves then combine well. Serve warm with rice, roti or appam.
NB: If you use iron pan for roasting, you get little more black colour. Spices adjust according to your taste. Enjoy cooking..
