Carrot Halwa, one of the most popular Indian desert. Known to have originated in Punjab. Here is quick and easy carrot halwa recipe for you all to try.
Ingredients
- Carrot 1 kg
- Milk 2 cup + 1 cup
- Sugar 1 1/2 cup
- Cardamom Powder 1/4 tsp
- Saffron Strands few
- Almonds 2 tbsp
- Raisins 2 tbsp
- Ghee 3 to 4 tbsp
Method
Grate carrot and keep aside. Heat 2 tbsp ghee in a medium size pan and sliced almonds and raisins and fry till golden brown and keep aside. Now add 1 tbsp ghee in the same pan and add grated carrots and stir well. Stir until carrots become soft and ghee comes out from edges of the pan. Add 1 cup milk and cover and cook for 2 minutes. In another small sauce pan boil 2 cups of milk with cardamom powder and saffron till milk reduces to around 1 cup for around 8 to 12 minutes. Stir occasionally in between to prevent sticking.
Add sugar and saute well. Now add the thickened milk mixture into the carrot mixture and stir well. Add 1 tbsp of ghee and stir well. Stir continuously till the carrot mix gets dry and get thick consistency. Put off flame add fried almonds and raisins and mix well. Serve warm or cold.
NB: You can use cashew nut or pista instead of almonds. Enjoy cooking.
