Hawaiian chicken salad bring chicken , fruit and nuts together with a delicious sweet and salted dressing. Its great for brunch or supper.
- Chicken breasts 3 boiled,cooled and diced
- Ripe Papaya 1 cup peeled and diced
- Ripe Pineapple cup diced
- Avocado 1 stoned, peeled and diced
- Tomatoes 2 diced
- Dark Raisins 2 tbsp
- Spring Onion 2 tbsp chopped
- Celery stalk 1 diced
- Ripe Mango 1/2 cup peeled and diced
- Coriander leaves 2 tbsp finely chopped
Dressing (blended)
- Mayonnaise 1/2 cup
- Sour Cream 1/2 cup
- Bottled Mango chutney 1/4 cup
- Powdered Ginger 1/2 tsp
- Chicken or Meat curry powder 1 tsp
- Lime juice 2 tbsp
- Salt
- Sugar
Method
Put all the ingredients except coriander leaves into a bowl containing salad dressing and mix well.
Garnish with coriander leaves. Serve immediately.
It is best to mix this salad just before serving, to avoid the salad juices settling at the bottom. This salad tastes best chilled.
