Chilli Tuna Rice

Don’t spend hours to make dinner, its only take 20 to 30 minutes to create this simple healthy tuna rice. Its great meal for family, friends. Tuna is low in fat and full of good skin and brain boosting properties. Chilli and other spices add a punch of flavor.  Enjoy.




Ingredients
  • Basmati Rice 1 cup
  • Can Tuna in chilli Oil 210 gm (drained)
  • Onion 1 big chopped
  • Tomato 2 medium chopped
  • Ginger 1 inch piece finely chopped / minced
  • Garlic 3 cloves minced or finely chopped
  • Green Chilli 2 sliced
  • Turmeric Powder 1/4 tsp
  • Chilli Powder 1 tsp
  • Coriander Powder 1 tsp
  • Garam Masala 3/4 tsp
For the seasoning
  • Oil 2 tbsp
  • Cinnamon 1 inch piece
  • Cloves 3
  • Cardamom 2
  • Bay leaf 1

Method

Cook rise in salted boiling water until cooked, then drain and refresh. 


Finely chop onions, green chilli, ginger and garlic. Puree the tomatoes in a blender.  Heat oil in a pan add the ingredients mentioned under seasoning. Add finely chopped onions and sauté until it turns golden brown.  Add ginger, garlic, green chilli and sauté for few minutes.


Add tomato puree, turmeric powder, salt needed, chilli powder, coriander powder, garam masala powder, and cook until the raw flavour goes and oil separates. 

Now add the drained tuna chunks and sauté for two minutes and add cooked rice to the mixture. Mix everything well and simmer for a few more seconds until everything combines well. 

Garnish with finely chopped coriander leaves and serve with mixed vegetable raita or papad.
